4 Weeks and Time is Flying

Gosh, we can not believe it has been 4 weeks that our sweet baby girl entered the world. We have had such an incredible past 4 weeks and are so looking forward to seeing our daughter grow, but we sure will miss her newborn stage (which we are still in.. yay). I need to catch ya'll up on pictures but for now I will leave you with our 1 month picture. Let's just say we were having a little bit of a fussy afternoon but mommy still decided to do a photo shoot which well.. did not end up so great, hence the last photo so pictures were limited:)

Mommy and Daddy are still trying to figure out who I look like. I am losing my hair and it is coming in blonde to match my long blonde eyelashes and eyebrows (which mommy loves):) My eyes are bright blue and I think I have daddy's nose but then some days I think I have mommy's nose. I have big hands and feet like mommy and long legs like daddy. I am loving hearing my voice so I grunt a lot. I feed every 2-3 hours and even sometimes 4-4.5. I am much more alert these days and I love tummy time, my play mat, bouncy seat and swing. Oh and mommy and I have story time and dance and music class everyday. I love to dance to Raffi with mommy:) I almost think she likes Raffi more than me because she loved it as a child! Enjoy the photos!

Welcome Riley Elizabeth Sullivan

Matt and I are honored to announce the arrival of our sweet daughter, Riley Elizabeth Sullivan on April 18th, 2011 at 6:35 pm weighing 6 lbs 3 oz and 18 inches long. We could not be happier and our little pumpkin has taken over our hearts. We have been just loving, kissing, hugging, snuggling, playing, admiring and taking photos our our little angel that i have finally had a moment to post.. not to mention getting use to this whole parenting thing is a little overwhelming but am loving every single minute of it. We thank the Lord everyday for blessing us with such a miracle and healthy baby girl. Ok, enough with the talking I will show the pics:) Enjoy! We love you Riley.

39 Weeks and Can't Wait to Meet You!!!

We are patiently waiting for our sweet baby girl to arrive:) We are on our toes 24/7 and only God and this little baby are in control of the her arrival. There is a full moon tonight so I wonder if she will come?!??! Someone told me two days before or two days after a full moon is when a baby will come so we shall see. In the meantime I am keeping busy with my monogramming and cleaning the house getting ready for her big day. I had a wonderful birthday on Wednesday and the beautiful weather made is just perfect. Matt and I went on a picnic and went out for ice cream. Just a perfect evening and probably the last with just the two of us:)

Weeks 36 and 37

Well D-day is two weeks from Friday, April 8th and we can hardly stand the anticipation, so hurry and come out baby girl! The doctor appointments are going well and she is right where she needs to be:) I am feeling GREAT! I eat all day and night, literally I wake up in the middle of the night and drink milk and a banana.. is that weird? I know I am going to miss these baby kick and movement but can't wait to meet her:) This time of year makes me so happy, all the flowers are blooming, warm weather, everyone is outside riding bikes and walking, the smell of fresh cut grass, pretty yards, it's just so fun but the most fun of all is meeting our sweet little girl! Enjoy the pics.

Artichoke, Spinach and White Bean Dip

Matt and I started the Final Four events out with this light and delightful dip, you must try it. YUMMY! 1/4 cup (1 ounce) grated fresh pecorino Romano cheese 1/4 cup canola mayonnaise 1 teaspoon fresh lemon juice 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/8 teaspoon ground red pepper 2 garlic cloves, minced 1 (15-ounce) can organic white beans, rinsed and drained 1 (14-ounce) can baby artichoke hearts, drained and quartered 1 (9-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry Cooking spray 1/2 cup (2 ounces) shredded part-skim mozzarella cheese
Preheat oven to 350°. Place Romano cheese, 1/4 cup mayonnaise, 1 teaspoon lemon juice, salt, black pepper, red pepper, minced garlic, and white beans in a food processor, and process until smooth. Spoon into a medium bowl.

Stir in the artichokes and spinach.

Spoon the mixture into a 1-quart glass or ceramic baking dish coated with cooking spray. Sprinkle with 1/2 cup mozzarella.

Bake at 350° for 20 minutes or until bubbly and brown

Savory Sausage, Spinach, & Onion Turnovers

Savory Sausage, Spinach, & Onion Turnovers

From Cooking Light Magazine

2/3 c diced, peeled red potatoes

1/3 c diced red bell pepper

1/3 c diced yellow onion

2 (3.5- ounce) links hot chicken Italian sausage, casing removed

3 c bagged washed baby spinach

2 Tbl. finely chopped fresh basil

1/4 Tsp salt

1/4 tsp crushed red pepper

1/2 (14.1 oz) package refrigerated pie dough

2 Tbl water 1 large egg white, lightly beaten

3 Tbl grated Fresh Parmigiano-Reggiano cheese

Preheat oven to 400 degrees Heat medium non stick pan on med-high heat. Coat pan with cooking spray. Add potatoes, bell pepper, and onion to pan; saute 4 minutes or until onions begins to brown, stirring frequently. Add sausage; cook 4 minutes or until browned, stirring to crumble. Stir in spinach; cook 2 minutes or until spinach wilts. Stir in basil, salt, and red pepper. Remove from heat
Cut dough into 4 equal portions. Roll each into 5 inch circles. Spoon about 1/2 c potatoes mixture on half of each circle, leaving a 1/2 inch border. Fold dough over potato mixture until edges almost meet. Bring bottom edge of dough over top edge; crimp edges of dough to form a rim. Place turnovers on greased baking sheet. Combine 2 Tbl water and egg white in a small bowl, stirring with a whisk; brush evenly over dough. Sprinkle about 2 tsp cheese over each turnover. Bake 400 degrees for 1 minutes or until golden brown. Let stand for 5 minutes before serving
