And then there were 5...

Well, I watered the ferns on Sunday and then Tuesday came and this is what I found.... 5 eggs! I am so excited to watch 5 little birdies grow{I think he nest is a bit small for 5 birdies but we will see}.

A Little Surprise

This is the second Spring in our home and a little family of birds found the same place to start a family as last year, our FERNS!! I water the ferns every morning and last week they started making the nest. What a suprise, YAY another year of watching little eggs hatch. Yesterday, I checked to see how the nest was coming and what do you know I found 2 little blue eggs and today I found a third:) I just think it is the most precious thing to see eggs in a nest.

Chef Matty Sullivan

My 28th birthday was such a wonderful day! The weather was amazing and the sun was out shinning and flowers in full bloom!! I got a pedicure and then had lunch on the water with my friend Kim:) Matt, my sweet, sweet husband sent me the following e-mail which gave me butterflies and so excited about our evening:
"Bride,

Dinner will be served al fresco at 6:15PM.
Tonight's menu:
Matty Sullivan's Excellent Eggplant Parmesan
Wheat Spaghetti
Cranapple Spinach Salad
Wine will be served on the back veranda.

We will be taking a short ride to have dessert at the Coldstone Creamery at Mayfaire.

I look forward to seeing you later this evening."

The dinner was absolutely amazing, and for those of you who do not know, Matt DOES NOT COOK but has been very creative in the kitchen lately with me having tennis matches a lot!! Needless to say we had a wonderful dinner on our new outdoor patio furniture on the gorgeous evening of April 13th.

A Southern Twist

..on GRITS!! We all love grits and another way to serve them at dinner or brunch. I had all my pictures ready to share from our Easter weekend last week escaped me and was not able to share them in time, so here I am now sharing this delicious side dish with you all. ENJOY!






Ingredients:
1 teaspoon garlic salt
1 cup uncooked quick-cooking grits
1/3 cup finely chopped red onion
5 tablespoons butter, divided
2 large eggs
1 (10-oz.) package frozen chopped spinach, thawed and drained
1 1/2 cups (6 oz.) shredded Parmesan cheese
1/2 cup bottled creamy Caesar dressing
1/2 teaspoon freshly ground pepper
1 1/4 cups coarsely crushed garlic-flavored croutons

Preparation
1. Preheat oven to 350°. Bring garlic salt and 4 cups water to a boil in a large saucepan over medium-high heat; gradually stir in grits. Reduce heat to medium, and cook, stirring often, 5 minutes or until thickened. Remove from heat, and stir in onion and 3 Tbsp. butter.

2. Whisk together eggs and next 4 ingredients in a large bowl. Stir about one-fourth of grits mixture gradually into egg mixture; add remaining grits mixture, stirring constantly. Pour into a lightly greased 13- x 9-inch baking dish.

3. Melt remaining 2 Tbsp. butter, and toss with coarsely crushed croutons; sprinkle over grits mixture.

4. Bake at 350° for 30 to 35 minutes or until mixture is set and croutons are golden brown.

Easter Weekend Recap

I wrote this and then never posted.. last week was CRAZY...forgive me bloggers:

What a wonderful weekend with family, the Lord and sunshine! Something about Easter makes me so happy, I just love it. My family came into town and we had a blast. Like always, mom and I prepared fantastic yummy meals that everyone enjoyed. It is so fun to cook with my mom, if only she lived around the corner. The weekend was filled with the beach, tennis and fun drinks:) The Easter Bunny came and visited as well but I got so excited I forgot to take a picture of what he brought us:) It is almost gone now:) Sunday afternoon we enjoyed Easter with the Sullivan's and had a scavenger hunt which took us to a word scramble and then our present was hiding where the scramble said to find our gift. Laura, my mother-in-law was very creative and then of course had a delicious HUGE meal. After all the meals this weekend we don't need to eat for weeks:) yea right. Here is a recap of the weekend.

We celebrated my birthday and mom made Easter bunny carrot cake. So festive and YUMMY!


Greens and Grits was the most delectable addition to our Easter dinner mom and I made along with ham, roasted carrots, pistachio salad and bunny bread. The recipe will be on the next post.

WESLEY!!!!! If you did not read the post prior to this you will need to catch up in order to understand. I will give you a second.. go ahead:) Ok, now that you are caught up my little brother was the winner.
Wesley and Matt were in the Championship round and Wesley's blue egg was the winner:)

Homemade Easter Tree

Ever Since I can remember my mom had an adorable Easter Egg Tree. For the last few years I have been on a search to find one just like hers and just could not find exactly what I was looking for, so I decided to make one on my own. I got a pot, plaster, paint, decorative eggs, white tape and pussy willows. With some time and effort....tadaaa!!! I made this last year and was so proud of myself. People say I should sell them:) Once again taking the tradition from my mamma and bringing it into our family. I am so thankful we have such great traditions:) I love you mom and dad!
