GT vs NC STATE

As most of you know we are HUGE Georgia Tech fans because Matt's father went to GT and Matt has grown up a fan. Considering I did not go to an SEC school or a school with football in general :( I am now taking on my husbands beloved Jackets as my favorite college team, so sweet I know:) We invited our very best friends down, Jennifer and Brian Morrison to the game because they both went to NC State. We had a great weekend and it is always so much fun spending time with them. We had beautiful weather on Sat morning and then boy did it got hot during the game, phew we were roasting and it is almost October which we were so surprised. Although our beloved Jackets did not win, we had such a great weekend and had MANY MANY laughs:) Love ya'll! Such a surprise that we were able to meet up with our high school BFF Laura Fritz and Laurence for dinner on Friday night, so great all catching up. It had been too long since we were all able to get together. Miss ya'll already! xoxo

Oh so satisfying, Chicken Portabella Lasagna

If you don't ever cook anything off my blog, you MUST and I repeat MUST make this dish. Matt and I melt in our chairs every time I cook this, so do NOT miss out and please share if you make it. For those of you that don't like mushrooms, you don't have to add them but be nice and put them in there for everyone else and you can pick them out because they are amazing:) Now, don't stop for a minute and go grab the ingredients and start cooking away. Bon Appetite!


Melt butter in large Dutch oven over med-high heat; add chicken and mushrooms and saute 10 minutes or until chicken is done and mushrooms are tender. Remove from heat.

Stir in spinach, soup and next three ingredients

Stir in spinach, soup and next three ingredients, fold in cheese

Spoon 1/4 chicken mixture in lightly greased 8x8 pan

Arrange 2 noodles on top of mixture.

Repeat layers twice; top with remaining chicken mixture. Sprinkle with Parmesan cheese.

Bake cover 45 minutes; uncovered 15 minutes or until bubbly. Let stand 10 minutes.

3 (6oz) boneless chicken breast, diced
1 (8oz) pack sliced baby portabella mushrooms
1 (10oz) can cream of mushroom soup
1 (8oz) container sour cream
½ tsp pepper
¼ tsp salt
1 (8oz) block sharp cheddar, shredded
6 lasagna noodles
3 tbl grated Parmesan cheese

350 degrees
Drain spinach

Comfort food


This is one of Matt and I's favorite dishes, Chicken Tamale Casserole! I mean this is a hit and you must try it. I am not sure where I found the recipe and I am so sad I can not remember, but it is a keeper. This dish can be made all year long, but we tend to eat it more often in the Fall and Winter months. We love Mexican food so if you do as well, I can promise you this will be in your recipe box and on the menu at least once a month. Enjoy! TGIF!


Ingredients:
1 c 4-cheese Mexican blend cheese, 1/3 c milk, 1 egg, 1 tsp. cumin, 1/8 tsp. red pepper, 1 can cream-style corn, 1 (8.5oz) box corn muffin mix, 1 can chopped green chilies, drained, 1 (10oz) can red enchilada sauce, 1 cups shredded chicken, ½ c sour cream.

Combine 1/4 c cheese and next 7 ingredients (through chilies) in a large bowl

Stirring until moist

Pour mixture into a 13x9 inch baking dish coated with spray.

Bake 15 minutes or until set. Pierce entire surface liberally with fork

Pour enchiladas sauce over top.

Top with chicken
Sprinkle with remaining 3/4 c cheese

Bake 15 minutes or until cheese melts. Let stand 5 minutes. Top with sour cream.

Breakfast Cookies

This is a yummy treat that the husband and I thoroughly enjoy anytime of the day. This cookie is more on the healthy side so you don't feel as guilty eating it:) A breakfast cookie sandwich makes such a tasty snack, so hurry and make it so you won't miss out! Happy Wednesday!

Breakfast Cookies

1/2 c Margarine
1 c Firmly Packed Brown Sugar
1 1/2 c Whole Wheat Flour
1 c Oats
2/3 c Wheat Germ
1/2 c Non Fat Dry Milk
2 Egg Whites
1 1/2 c Apple Sauce
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1 c Raisins or Chocolate Chips
1 c Chopped Pecans

Combine all ingredients




Drop by large spoonfuls onto greased cookies sheet


Bake 375 for 11 minutes
Keep in fridge. For added protein spread peanut butter between two to make sandwich.

Family Fun in Beaufort

What a great time we had in Beaufort, SC visiting my family. My aunt, uncle and cousins invited our family down for the weekend and like always we have a blast. Their house sits on the water and is absolutely beautiful so I could not resist in taking pictures. We have a nice cocktail hour on the dock and watched the sunset, what a beautiful Friday evening. We enjoyed the beach Saturday afternoon and then another fun night filled with cocktails and games. It was a haul to get there but we enjoyed every minute of it and can't wait for the next family event. We always have such a great time.

Labor Day Fun!

The Isley's had everyone over on football Saturday for a late afternoon cookout. The Isley's always go above and beyond and have the coolest set up, and of course we always have such a blast. Pool volleyball is always very much enjoyed by the boys, but it is very intense if I do say so myself. We watched the Carolina/LSU game outside on a huge blow up screen and it was so awesome, boy I would love one of those:) Karaoke was enjoyed by everyone and DJ Jiggy sure has the best tunes. I managed to shoot some photos of the food! Great idea for a cookout and GAME DAY SATURDAY!! Hope everyone had a happy Labor day!!!!!

Potato salad, baked beans, slaw and BBQ.. it was delicious as always.

Jiggy made BBQ that he cooked all night and it was so yummy!
