Savory Sausage, Spinach, & Onion Turnovers

I made these last Sunday night and they were AMAZING. You must try:) Enjoy!
Savory Sausage, Spinach, & Onion Turnovers

From Cooking Light Magazine

2/3 c diced, peeled red potatoes

1/3 c diced red bell pepper

1/3 c diced yellow onion

2 (3.5- ounce) links hot chicken Italian sausage, casing removed

3 c bagged washed baby spinach

2 Tbl. finely chopped fresh basil

1/4 Tsp salt

1/4 tsp crushed red pepper

1/2 (14.1 oz) package refrigerated pie dough

2 Tbl water 1 large egg white, lightly beaten

3 Tbl grated Fresh Parmigiano-Reggiano cheese

Preheat oven to 400 degrees Heat medium non stick pan on med-high heat. Coat pan with cooking spray. Add potatoes, bell pepper, and onion to pan; saute 4 minutes or until onions begins to brown, stirring frequently. Add sausage; cook 4 minutes or until browned, stirring to crumble. Stir in spinach; cook 2 minutes or until spinach wilts. Stir in basil, salt, and red pepper. Remove from heat
Cut dough into 4 equal portions. Roll each into 5 inch circles. Spoon about 1/2 c potatoes mixture on half of each circle, leaving a 1/2 inch border. Fold dough over potato mixture until edges almost meet. Bring bottom edge of dough over top edge; crimp edges of dough to form a rim. Place turnovers on greased baking sheet. Combine 2 Tbl water and egg white in a small bowl, stirring with a whisk; brush evenly over dough. Sprinkle about 2 tsp cheese over each turnover. Bake 400 degrees for 1 minutes or until golden brown. Let stand for 5 minutes before serving

Introducing....Sew Personal

So I have been so bad about blogging because not only am I getting ready for the arrival of one of the most precious things in the world, our baby girl, I am starting a new business! "Sew Personal" is a custom monogramming business which I am having so much fun doing. It is very time consuming right now trying to get a handle of everything but so much fun. I have done many things for friends and made gifts as well. I will let you know when my facebook page is up and running. I am working on both the facebook page and logo now but here is a sneak peak of what I have been up to!

All Packed And Ready To Go!

D- Day is 5 weeks away and yes, I am packing up the bags. I have heard so many of my friends going a couple weeks early so I am just thinking ahead:) Mommy is halfway packed and daddy not yet, but baby Riley is all ready to go:)

I am feeling great and loving being preggo but we can't wait to meet our baby girl. I will miss the sweet kicks and movements and my arm rest:) but meeting our little girl is so much better. The warm weather is so amazing and makes me excited to take her for walks this Spring:) I LOVE SPRING!!!!!

We are ready for you Riley! Can't wait to meet you sweet girl:)

The Big Reveal....

The NURSERY!!!!!

I know I know, I am finally putting pictures up so those of you that asked here you are:) I have had the nursery done since almost the first of the year but wanted to wait until I made the valance to make the "nursery reveal." I was able to find time to make it last weekend so now I can share baby Riley's nursery!! It has been so much fun putting our sweet pink nursery together. Gosh, it sure takes a lot of time but I got all of the furniture and ordered bedding as soon as we found out it as a girl so we have been able to take our time and enjoy it rather than rush (which I highly recommend) because I loved every minute of it! My mother and mother-in-law were a big help with the decor so I am so thankful to have had the help from them. Matt did the painting and surprised me one day when I got back from work so I am so proud of him. Enjoy the photos:

"Tickled Pink" in Charlotte

What a beautiful and lovely weekend we had in Charlotte this past weekend to celebrate our sweet baby girl. I am so thankful to have such wonderful friends and family who made this day so very special. I knew it was going to be a beautiful shower but I was so excited and amazed at the extra special touches they did which were so cute, as I knew it would be:) Riley is going to be one well dressed little girl with all the clothes she received this weekend:) People sure do love to buy for girls, they are so much fun! We had a wonderful celebration with delicious food, BEAUTIFUL decor and most importantly incredible people to make this so special. I am 33 weeks today... 7 weeks to go and it is now March!!!!! YAY!

Beautiful Weekend

WOW! What a gorgeous weekend we are having. I can't help but to stay outdoors as much as possible. I set up my sewing machines outside on the screened porch and sewed yesterday. I am making burp cloths and trying to figure out my monogram machine:) I will let you know when I am up and running. Life has been crazy around here as we prepare for our sweet angel's arrival in two months, spring cleaning in the yard and in house, working and well working and learning on my new endeavour..MONOGRAMMING:) It is all so fun! Thought you would enjoy a recipe from Southern Living since I have been slack lately..sorry...

Crispy Chicken and Rice Casserole

Ingredients
1 cup uncooked long-grain rice
2 cups chopped cooked chicken
2 (10 1/2-ounce) cans cream of mushroom soup
1 (8-ounce) can sliced water chestnuts, drained
1 (3 1/2-ounce) can sliced mushrooms, drained
1 cup chopped celery
3/4 cup mayonnaise
1 small onion, chopped
1/2 cup sliced almonds
1 tablespoon lemon juice
1 teaspoon salt
1 cup crushed cornflakes cereal
Garnish: chopped fresh parsley

Preparation
Cook rice according to package directions. Stir together cooked rice and next 10 ingredients in a bowl. Spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with cereal.
Bake at 350° for 30 minutes or until golden and bubbly. Garnish, if desired.
Note: Freeze casserole up to 1 month, if desired. Thaw casserole in refrigerator overnight. Bake, covered with aluminum foil, at 350° for 45 minutes. Remove foil, and bake 15 minutes more or until thoroughly heated.
